[Homemade] Japanese Ramen Egg (Ajitsuke Tamago)

  • I’ve had these before. Some have been salty, and some have been sweet. What did you use to marinate it?

    6 eggs
    1/3 cup Japanese soy sauce
    1/3 cup water or dashi stock
    1 tablespoon sugar
    1oz mirin
    1oz sake

    Boil water and then gently lower cold eggs into the pot. Boil for 6-7 minutes then throw the eggs into ice water bath for a couple minutes. This helps the shells not stick.

    Combine all marinade ingredients in a sauce pan and heat up but not to boiling. Then put the eggs and marinade in a container. Throw a clean paper towel on top of the eggs, letting the marinade soak the paper towel. This will make it so the eggs marinade evenly.

    Refrigerate overnight.
